Taco Friday is a known tradition here in Sweden, and who would we be if we didn't make a tea perfect to drink with your Friday tacos?
This is a bit out of the ordinary taco/fajitas, inspired by the world and what we had in our fridge. But if I may say it myself, it was a delightful one, especially when enjoyed with our cold-brewed Friday tea!

Bean mix
1 packet of kidney beans
1 packet of chickpeas
(black beans works wonders as well)
Oil
2 tsp smokey paprika seasoning
2-4 tsp cumin
1 tsp chili powder
1tsp dried coriander seed
1 tsp dried oregano
1 tbs honey
1/2-1 tsp salt
garlic
Topping
Fried kale
Fried capsicum
Fried red onion
Feta cheese sauce
Feta cheese mixed with yoghurt and fresh garlic

Oil your frying pan and add all the spices into the oil while heating up. Let the spices fry in the oil for a while and then add the honey and the beans. Fry them until you see the beans nicely covered in the spice mixture.
Kale - Heat up the pan with a bit of oil add the washed and chopped kale into your high heated frying pan, make sure to cover the kale in oil, let fry until you see the kale getting some colour and turn a bit crispy. Add a bit of salt.
Capsicum & Red onion - Add the sliced pieces of capsicum and onion in a high heated frying pan, toss them around in the pan until you see them getting colour almost burnt colour, or as it's called caramelised.
Feta cheese mix - Add the feta cheese in a bowl with a bit of yogourt and pressed garlic.

Now, when you got all your parts ready, take out your bottle of cold-brewed Friday tea and light some lovely candles.
